Copycat Chicken Salad Chick Pimento Cheese

If you love the delicious pimento cheese from Chicken Salad Chick then you’ll love this easy copycat recipe.

Chicken Salad Chick is such a great place to go for lunch. I love recreating their recipes at home including this pimento cheese and their Lauryn’s lemon basil chicken salad. This pimento cheese is great on crackers, toast, or even as a sandwich. It’s also such a great recipe to make during the summer since there’s no baking involved.

Their pimento cheese is a little different than the pimento cheese I’ve had before but it is still really good. Other pimento cheese recipes usually use cream cheese but Chicken Salad Chicks does not.

Ingredients needed

For this copycat pimento cheese recipe, you will need:

  • Medium cheddar and pepper jack cheese: I recommend buying a block and shredding it yourself. Freshly shredded tastes much closer to the original.
  • Mayonnaise: I used Duke’s mayonnaise.
  • Jarred pimentos: You’ll need a four ounce jar of pimentos, drained.
  • Worcestershire sauce: To give the pimento cheese some flavor.
  • Garlic powder, onion powder, salt, and pepper: To season this pimento cheese.

You will also need a grater with large slots (if grating the cheese yourself).

How to make

Using the large setting on your cheese grater, grate four ounces of medium cheddar cheese and four ounces of pepper jack cheese.

In a medium bowl combine the mayonnaise, Worcestershire sauce, and seasoning. Mix well with a whisk or spoon.

Drain your pimentos.

Add in your cheese and pimentos then stir well.

Serve with crackers, toast, or use as sandwich filling.

How to store leftovers

Store leftovers in an airtight container in your refrigerator. Leftovers will be good for up 4 days after making.

Tips

  • I think this pimento cheese tastes much closer to the original if you grate your own cheese. Of course, if you’re in a hurry you can skip this step but if you have time it will make a big difference.
  • I have heard (but cannot confirm) that Chicken Salad Chick uses Duke brand mayonnaise.
