This Italian herb chicken is an easy recipe that requires just a handful of ingredients. It goes great with so many sides or you can serve it with an alfredo sauce and fettuccine.

I have a very basic but super delicious chicken breast recipe for you today. I don’t know about you but I love easy recipes for chicken breasts. This Italian herb chicken is just that. This chicken is the perfect easy recipe for busy weeknight dinners.

While this recipe is very simple, there is a cooking hack that will help your chicken breast stay juicy. Say goodbye to dry chicken breasts.

🍗 Ingredients needed

ingredients needed to make Italian Herb Chicken

For this recipe, you will need:

  • Chicken breasts: You will need four boneless and skinless chicken breasts.
  • Olive oil: I recommend EVOO or you can use another neutral cooking oil like safflower oil.
  • Italian herb seasoning, salt, and pepper: The seasoning for the chicken.

If you would like to use bone-in chicken breast you will need to increase your cook time.

🔪 Equipment needed

You will need a large skillet with a lid. I used a cast iron skillet but a regular skillet will also work.

🍽 How to make (step by step guide)

Trim any excess fat from your chicken breast.

Next, in a large skillet add the olive oil heat your oil on medium heat.

Add the chicken breast (I did two at a time) and then sprinkle the Italian herb seasoning and salt and pepper over.

Turn the heat to high and then sear each side for 3 to 4 minutes.

Reduce to a low heat then cover with a lid. Cook for 20 minutes or until the juices run clear. The chicken should reach an internal temperature of 165 degrees and there should be no pink when you cut inside. Extra large chicken breasts may take longer to cook.

  • Try adding a little minced garlic to the chicken breasts.
  • You can add more Italian herb seasoning to taste, if desired.

⭐ Tips

  • Sear your chicken on both sides.
  • You may need to cook two chicken breasts at a time unless you have a very large skillet.

🥡 How to store leftovers

Store any leftover chicken in an airtight container in your fridge. Leftovers will be good for up to four days after making.
