These protein rice crispy treats are not only delicious but so easy to make. They are loaded with tons of extra protein! They make for a wonderful high protein snack.

I have been on a protein powder kick lately. I usually start my day with a smoothie made from a scoop of Vega’s Caramel Toffee protein powder, a banana, and almond milk. Protein is such a powerhouse and I love getting extra protein in.

I thought it would be fun to make something different with protein powder rather than my typical smoothie. These protein rice crispy treats are so easy to make and they taste great. You can use your favorite protein powder (I recommend sticking with flavors like caramel toffee, vanilla, etc).

💭 Rice crispy treats or rice krispie treats?

Some people say it is rice crispie treats, others rice krispie treats, or rice cereal treats. Whatever way it is spelled or said, they all mean the same thing.

👩🏻‍🍳 Ingredients needed

For this recipe, you will need:

  • Butter: I recommend using unsalted butter so you can control the sodium going into these rice crispy treats.
  • Rice cereal: Such as Rice Krispies.
  • Mini marshmallows: Be sure to use fresh marshmallows. You will need one bag (16 ounces) of mini marshmallows.
  • Protein powder: I used Vega’s Caramel Toffee protein powder for mine. I also really like their vanilla protein powder.
  • Salt: You will need just one pinch of salt.

🍽 Equipment needed

You will need a 9 x 13 inch pan, a large cooking pot, and a large mixing bowl.

🥣 How to make (step by step guide)

To make this recipe, begin by melting the butter in a pot on your stove-top. Add the pinch of salt to it.

While the butter melts, measure out your cereal and one cup of marshmallows (do not melt these). Combine them in a large bowl and set aside for later.

Next, stir in the bag of the marshmallows (minus the one cup) with the melted butter. Stir and cook on low until well combined.

Reduce the heat and add the protein powder a little bit at a time while stirring. Stir until it is well combined.

Pour over the cereal and marshmallows in the large bowl.

Stir well with a spatula until everything is combined and then transfer to a well greased 9 x 13 inch pan. Gently pat them down, too much pressure will make them tough.

Let sit for at least one hour before cutting and serving.

  • Try this with your favorite flavor of protein powder.

⭐ Tips

  • Use fresh ingredients. Stale cereal and stale marshmallows will effect the quality and taste of your treats.
  • Cook your marshmallows and butter low and slow. Stir them constantly.
  • Gently press your rice crispy treats into your pan. If you use a pressure that’s too firm, your treats can become hard.

Store these protein powder rice crispy treats in an airtight container at room temperature. Do not refrigerate them.

Are Rice Krispies rich in protein?

Rice Krispies only have about 2g of protein but you can add protein powder to your Rice Krispies treats if you’re looking to get more in.

Why are my rice crispy treats tough?

If your treats are tough, you could have pressed down on them too much or used ingredients that aren’t fresh.

Can I freeze these treats?

These treats do not freeze well. I recommend making them fresh.

  • 6 cups rice cereal
