The creamed corn at Rudy’s is one of my favorite side dishes ever. I love to make this copycat version because it can easily be made in a crockpot or slow cooker which comes in so handy for potlucks, barbecues, and holidays like Thanksgiving and Christmas!

This dish literally could not be any easier. Simply throw everything in your crockpot and go. This is such an easy peasy, no fuss recipe.

I love making this creamed corn for summer BBQ parties. It is also a great side dish for Thanksgiving dinner too!

🌽 What ingredients are needed for this recipe?

The ingredients needed to make copycat Rudy's creamed corn in the crockpot.

This recipe is so easy to make and you need just a few ingredients. To make this creamed corn, you will need:

  • Frozen corn: You’ll need two bags (about 12 ounces each).
  • Unsalted butter: Butter and corn just go together!
  • Cream cheese: I used full fat cream cheese.
  • Heavy cream: The heavy cream really gives this corn a restaurant quality taste.
  • Sugar: To sweeten our corn.
  • Honey (optional): If you want an even sweeter creamed corn add one tablespoon of honey.
  • Salt and pepper: I recommend adding salt and pepper to taste.

Spray your crockpot or slow cooker with non-stick spray.

Add the corn. Add the remaining ingredients and stir well. Cook on low for 3-4 hours.

How do you thicken up creamed corn?

You can add two teaspoons of corn starch if you feel like your creamed corn isn’t thick enough.

Is frozen or canned corn better for creamed corn?

For crockpot creamed corn, frozen is better. Canned or frozen both work in stove top recipes.

Why use a crockpot for this recipe?

Rudy’s serves creamed corn all day so they simmer their corn on low after making a big batch. This is a great way to replicate a restaurant at home with a slow cooker!

  • ⅓ cup white sugar

      I find with the heavy cream it turns out too watery when defrosted.
