Copycat Cracker Barrel Carrots

These slightly sweet carrots are such a versatile side dish. These Copycat Cracker Barrel Carrots are easily made in your crockpot or on your stove top.

These Copycat Cracker Barrel Carrots are such an awesome and versatile side dish. Easy enough for a weeknight dinner and tasty enough for a holiday side too. You can easily make these on your stove-top or throw them in your slow cooker!

🥣 Ingredients needed

The ingredients needed to make copycat Cracker Barrel Carrots.
  • Fresh baby carrots: You’ll need about two pounds of carrots.
  • Salt
  • Butter: Unsalted butter is best for this recipe. If you only have salted butter, reduce the amount of salt you use. You can also substitute margarine.
  • White sugar: For just an extra hint of sweetness.
  • Brown sugar: Again, for the slight sweetness.
  • Water

If you want to use regular carrots, you can although the Cracker Barrel version uses baby carrots. To use regular carrots, wash and clean the carrots, then skin them, cut them into sticks and follow the rest of the recipe.

🥕 Want the carrots to be extra sweet?

If you are wanting the carrots to extra sweet, add some extra sugar. Add about 1 tablespoon more of white sugar for some extra sweetness.

⏲️ Recipe instructions (step by step guide)

For the stove-top:

Add all of the ingredients to a large pot and cook over medium high heat then reduce to a simmer for about 20 to 25 or until the carrots are tender. Drain any excess water before serving.

For the crockpot:

Begin by spraying your crockpot with non-stick spray. Next add all of the ingredients except the water. Stir well. Add the water and cook on low for 6 hours. Drain the water before serving.

🥡 How to store leftovers

Store any leftover carrots in an airtight container in your fridge. Leftovers will be good for four days after making.

How long does it take for baby carrots to soften when boiling?

About 10 to 15 minutes.

Why are my carrots still hard after boiling?

Try cooking them a little longer. It may take as long as 15 minutes to get them tender.

    I have a big bag of regular carrots to use. Can I substitute these for the baby carrots? Do I need to add more cook time to the crock pot?

      You can absolutely substitute regular carrots. Cook them for 6 to 8 hours on low.
