Are you a fan of all the classic comfort food at Cracker Barrel? Cracker Barrel is one of my extended family’s favorite restaurants, in fact when they visit us in Texas that’s always where they want to go!
One of my three year old’s favorite foods there are the carrots. He ate two servings of them last time I made these copycat Cracker Barrel carrots at home. This was such a win because sometimes he’s a super picky little guy. These carrots are just slightly sweetened with a little bit of white sugar and brown sugar but it really gives them a pop in flavor. This is an easy peasy recipe to throw in your crockpot.
Why I love this recipe
I’m a huge fan of making side dishes in the crockpot, especially for holidays like Thanksgiving and Christmas. These copycat Cracker Barrel carrots are perfect for when your oven is full. I make these for Thanksgiving quite frequently and they always go quick. It’s also an easy and very simple recipe, just toss and go!
What dishes go well with these carrots?
These carrots are such a versatile side dish. They go great with roasted or fried chicken, meatloaf, pot roast, really almost anything. Sometimes, I like to use both my larger crockpot and smaller crockpot for dinner. I’ll make a whole chicken in my larger crockpot and then make these carrots in my regular size crockpot.
What ingredients do I need for this recipe?
- Fresh baby carrots: the star of this recipe!
- Salt: It might seem like a lot, but it is for two pounds of carrots and you will drain some out when the carrots are done cooking.
- Butter: Unsalted butter is best for this recipe. If you only have salted butter, reduce the amount of salt you use.
- White sugar: For just an extra hint of sweetness.
- Brown sugar: Again, for the slight sweetness.
- Water: Since this is a crockpot recipe, you will need some water. You’ll drain the carrots once you’re ready to serve.
If you want to use regular carrots, you can although the Cracker Barrel version uses baby carrots. To use regular carrots, wash and clean the carrots, then skin them, cut them into sticks and follow the rest of the recipe.
Want the carrots to be extra sweet?
If you are wanting the carrots to extra sweet, add some extra sugar. Add about 1 tablespoon more of white sugar for some extra sweetness.
How to make these copycat Cracker Barrel carrots
To make these carrots, first begin by measuring out your ingredients. You will need:
- 2 lbs fresh baby carrots
- 2 teaspoon salt you can do less salt, if you are sodium sensitive.
- 2 tablespoon unsalted butter
- 1 tablespoon white sugar
- 2 tablespoon brown sugar
- ⅓ cup water
Begin by spraying your crockpot with non-stick spray. Next add all of the ingredients except the water. Stir well. Add the water and cook on low for 6 hours. Drain the water before serving.
