This copycat Subway broccoli and cheese soup is the perfect warm and comforting soup on a cold day. It is a quick and easy copycat recipe!
I’m a huge fan of Subway and if you’ve ever checked out any of my other copycat Subway recipes (like these Subway chocolate chip cookies or these peanut butter ones) then you’ll know that for a long time Subway was one of the only lunch options for me at an old job that was pretty far out of town.
I love recreating restaurant recipes at home and this broccoli and cheese soup is no exception. It goes great with a homemade sandwich or will warm you up on a cold day.

Ingredients needed to this recipe
For this recipe, you will need:
- Butter: I recommend using unsalted butter since the chicken broth in this recipe can be quite salty.
- Yellow onion: You’ll need one small yellow onion, finely diced.
- Frozen broccoli florets: You can also use fresh, if desired.
- All purpose flour: To thicken the soup.
- Chicken broth or stock: You can also use vegetable stock.
- Carrots: You’ll want to cut these julienne style or buy the pre-shredded carrots in a bag.
- Salt: I really recommend doing salt to taste in this recipe. Depending on your brand of chicken stock, you may want less or more salt.
- Pepper, paprika, and garlic powder: To season the soup with.
- Cheddar cheese: I used a sharp cheddar.
- Half and half: You can also substitute whole milk if that’s what you have on hand.
How to make this recipe
- In a large cooking pot, melt the butter and saute the diced onion over medium heat until translucent.
- Pour in one cup of chicken stock then whisk in the flour. Turn your heat to low.
- Add in the salt, pepper, paprika, and garlic powder.
- Add the remaining chicken stock, half and half, and cheddar. Stir until everything the cheese is well combined.
- Add in the broccoli and carrots. Let the soup simmer for 30 minutes, stirring occasionally.
How to store leftovers
Store this soup in an airtight container in your refigerator. It will be good for 4 to 5 days after making.
Tips
- This recipe makes about four servings but you can easily double it, if desired.
- You can swap the frozen broccoli out for fresh, if desired.

Hi there, it is under step #4 Add the remaining chicken stock, half and half, and cheddar. Stir until everything the cheese is well combined. You can sub milk for the half and half, if you like though.
