I am one of those pumpkin spice people. I love everything pumpkin! After all, fall is my favorite season and I love all the delicious flavors that autumn brings. I love to bake everything pumpkin including this super easy pumpkin baked oatmeal.
I have been busy getting into pumpkin spice season by making pumpkin whoopie pies, cast iron skillet pumpkin bread, and Amish pumpkin bread. Next on my list was something warm and filling on one of those cooler fall mornings. Baked oatmeal makes for such a wonderful and easy breakfast.

⭐ Why I love this recipe
One of the best things about making baked oatmeal is that you can prepare it the night before, keep in the fridge, and then pop it in the next morning. It’s great to make on Sunday nights so you have a prepped breakfast to start the first few days of the week with.
I also love how easy this oatmeal is clean up! Seriously, it isn’t all sticky like when you make oatmeal in a bowl or on your stove top.
📋 Ingredients needed
To make this pumpkin baked oatmeal, you will need:
- Pumpkin puree: You’ll need one can of pumpkin puree (about 15 ounces).
- Old fashioned oats or quick oats: The base of the baked oatmeal.
- Brown sugar: To sweeten the oatmeal.
- Eggs: You’ll need two large eggs for this recipe.
- Salt: You’ll need just ½ a teaspoon.
- Pumpkin pie spice blend, cinnamon, nutmeg, and all spice: To give the pumpkin baked oatmeal some spice.
- Vanilla extract: Pure vanilla extract is best.
- Honey: To add some more sweetness. Extra honey is also great on top of this oatmeal.
- Milk: You can almost any type of milk for this recipe. Regular milk, almond milk, coconut milk, or soy milk all work well in this recipe.

Begin by combining the dry ingredients then stir well.
Next, add in your wet ingredients and stir well. I always crack the eggs in a separate bowl to beat them and then add them in.
Next pour into a well greased 8 x 8 casserole dish or deep dish pie pan.
Bake at 350 degrees for 40 to 45 minutes.

- You want to be sure to use pumpkin puree and NOT pumpkin pie filling. I don’t know why they always put the two so close together at grocery stores but it is a mishap to avoid!
- This recipe is great to prep the night before. Note that this oatmeal may take a few extra minutes to cook from a cold refrigerator.
- This baked oatmeal is also nice served with extra honey or a little maple syrup on top.

Ingredients
- 1 can pumpkin puree (about 15 ounces) NOT pumpkin pie filling
- 3 cups old fashioned oats or quick oats (dry and unprepared)
- ½ cup brown sugar
- 2 large eggs beaten
- ½ teaspoon salt
- 1 tablespoon pumpkin pie spice blend
- 1 teaspoon cinnamon
- ½ teaspoon nutmeg
- ½ teaspoon all spice
- 1 teaspoon vanilla extract
- 2 tablespoon honey
- 1 ½ cups milk (may use regular milk, almond, coconut, or soy milk)
Instructions
- Begin by preheating your oven to 350 degrees.
- Spray an 8×8 casserole dish with non-stick spray.
- In a large mixing bowl combine the oatmeal, cinnamon, brown sugar, nutmeg, all spice, salt, and pumpkin pie spice. Mix well with a large spoon.
- Add in the pumpkin puree, vanilla extract, milk, honey, and eggs. Stir well.
- Pour into an 8×8 casserole dish and bake for 40 to 45 minutes or until edges are golden brown.
