For this recipe, you will need:
- Rolled oats: You can use rolled oats or old fashioned oats. I don’t recommend using quick oats for this recipe though.
- Coconut flakes

- Coconut oil: Or you can use vegetable, safflower, or canola oil. I prefer to cook with coconut oil for many of my recipes.
- Salt

Preheat your oven to 325 degrees Fahrenheit. Line a baking sheet with parchment paper or a silicone baking mat.
Combine the oats, coconut flakes, brown sugar, cinnamon, nutmeg, and pecans into a large bowl. Stir well.
Next, whisk together the coconut oil, salt, and vanilla extract together in a small bowl.
Pour the mixture over the dry ingredients and then evenly distribute onto your baking sheet.
Bake for 45 minutes, stirring every 15 minutes or so. Let cool completely before serving.
