This simple Brown Sugar Granola recipe is perfect for snacking, adding to yogurt, or a delicious breakfast option! It is a delightful and cozy combination of wholesome oats, brown sugar, coconut flakes, and toasted pecans. Plus, it smells absolutely amazing while it bakes.

For this recipe, you will need:

  • Rolled oats: You can use rolled oats or old fashioned oats. I don’t recommend using quick oats for this recipe though.
  • Coconut flakes
  • Brown sugar: To sweeten the granola.
  • Cinnamon and nutmeg
  • Pecan pieces
  • Coconut oil: Or you can use vegetable, safflower, or canola oil. I prefer to cook with coconut oil for many of my recipes.
  • Salt
  • Vanilla extract

🍓Variations

Try adding some dried fruit into the mix, seeds, or different nuts. After baking, you could also add in chia seeds or chocolate chips.

🔪 Equipment needed

You’ll need a mixing bowl and a sheet pan for this recipe. If possible, I recommend using parchment paper (not wax paper) or a silicone baking mat for this recipe.

⏲️ Recipe instructions (step by step guide)

Preheat your oven to 325 degrees Fahrenheit. Line a baking sheet with parchment paper or a silicone baking mat.

Combine the oats, coconut flakes, brown sugar, cinnamon, nutmeg, and pecans into a large bowl. Stir well.

Next, whisk together the coconut oil, salt, and vanilla extract together in a small bowl.

Pour the mixture over the dry ingredients and then evenly distribute onto your baking sheet.

Bake for 45 minutes, stirring every 15 minutes or so. Let cool completely before serving.

You can serve this recipe with yogurt, fresh fruit, or just as a snack option.

Ingredients
  

  • 4 cups rolled oats or old fashioned oats
  • 1 cup coconut flakes
  • 1 cup brown sugar
  • 1 teaspoon cinnamon
  • 1 pinch nutmeg
  • ½ cup pecan pieces
  • ¾ cup coconut oil or sub vegetable, safflower, or canola oil
  • ¼ teaspoon salt
  • 2 teaspoons vanilla

Instructions
 

  • Preheat your oven to 325 degrees Fahrenheit. Line a baking sheet with parchment paper or a silicone baking mat.

    ¾ cup coconut oil, ¼ teaspoon salt, 2 teaspoons vanilla
  • Pour the mixture over the dry ingredients and then evenly distribute onto your baking sheet.
