🧀 Ingredients needed
For this cheese dip, you will need:
- White American cheese: You will want a block of white American cheese (such as Velveeta).
- Milk: I recommend using whole milk or 2% milk.

- Roma tomatoes
- Cilantro
- White onion
- Jalapeno pepper: Be sure to remove the seeds before using. You will only need about ¼ of a pepper. You can use more or less depending on your spice preference.
- Lime or lime juice
- Cumin and salt: The seasonings for the queso.
🌶️Variations
If you want a spicier queso, add more chiptole peppers or more jalapeno to your pico de gallo.
⏲️ Recipe instructions (step by step guide)
In a food processor, blend one tablespoon of your canned chipotle peppers. Blend until smooth (image 1).
Cut your cheese into cubes then add it to a large pot that has been sprayed with non-stick spray. Add in the milk, cumin, and blended chipotle peppers. Melt over a medium low heat, stirring frequently (image 2).
While the cheese melts, finely dice your onion, cilantro, tomatoes, and ¼ of a regular sized jalapeno with the seeds removed. Mix together with 1 to 2 teaspoons of lime juice (image 3).
Add to melted cheese and stir well (image 4). Add salt to taste. Serve with tortilla chips.

- Heat the queso on medium to low and stir frequently to avoid burning it.
- If your grocery store carries pre-made pico de gallo it is a great shortcut to save time.
- Do a taste test before adding more chipotle peppers. They are very strong.

Store any leftovers in an airtight container in your fridge. This dip will keep for three to four days after making.
