This spice cake banana bread is the perfect way to use up your overripe bananas! This recipe is easy, delicious, and smells amazing while it bakes.
I have already shared this yellow cake mix banana bread and this chocolate cake mix banana bread and someone actually commented and asked if they could use spice cake mix to make banana bread so of course I had to try it. The answer is, yes you can!
Bananas are always lingering in my kitchen. With two toddlers, sometimes they’re gone in a flash and sometimes they turn brown in our fruit bowl. I love having quick and easy banana bread recipes like this one to use them up with!

Ingredients needed
For this recipe, you will need:
- Boxed spice cake mix: About 15.25 ounces.
- Eggs: You’ll need three large eggs for this recipe.
- Butter: I used unsalted to control the salt in the recipe.
- Bananas: You’ll need three large bananas mashed with a fork or you can use your mixer to quickly mash them.
- Vanilla extract: If you can use pure vanilla extract, it is best for baking.
- Water: You’ll need just ⅓ cup of water.
You will also need a bundt cake pan or two loaf pans for this recipe. I prefer using a bundt cake pan because it helps the banana bread stay extra moist.
How to make this recipe (step by step guide)
This recipe is not only easy but it is very forgiving since it uses a boxed cake mix.
Begin by preheating your oven to 350 degrees. Next, add the cake mix, butter, vanilla extract, and mashed bananas to a large bowl.
Mix well then add in the eggs and water. Add the batter to a well greased bundt cake pan or two loaf pans.
Bake for 45 minutes or until a toothpick comes out clean from the middle.
How to store leftovers
Store any leftovers at room temperature in an airtight container. Leftovers will be good for 3 to 4 days after making.

Yummy! I used Mexican vanilla since it has a more cinnamony flavor. I also substituted water for heavy cream. No idea if it made it better. But it came out delicious! Also threw in about a cup of chopped walnuts and baked it at 330° in a bundt pan for 35 minutes.

Derp. I substituted heavy cream for the water.

Wondering if you could use applesauce in place of butter for less fat & more fiber?
Audrey
I haven’t tested this recipe with applesauce but I don’t see why you couldn’t experiment 🙂 let me know if it turns out OK.
