This crockpot shredded salsa chicken is so easy to make. You can use regular salsa or salsa verde! It’s great on burrito bowls, over rice, or you can use it as taco meat.

This salsa shredded chicken is so easy to make and my family loves this recipe. You can use salsa verde or regular salsa. Control the heat in the recipe by using mild salsa (or if you like a lot of heat, use medium or hot salsa).

This recipe is very easy. You need only four ingredients:

  • Chicken breast: You’ll need 3 to 4 large boneless and skinless chicken breasts. You can also substitute 4 to 6 boneless and skinless chicken thighs if desired.
  • Lime: You can use fresh or bottled lime juice for this recipe. I used the juice of one large lime.
  • Taco seasoning: I recommend using a low sodium packet.
  • Salsa: You can use your favorite. I used salsa verde but regular red salsa works too. Control the heat by using mild, medium, or hot salsa (whatever your heat preference is).

  • Spray your slow cooker with non-stick spray. Add your chicken breast.
  • Next, add the taco seasoning.
  • Add the lime juice and salsa. Cook on low for 6 to 8 hours or on high for 3 to 4 hours.
  • Shred the chicken using two forks and serve over flour tortillas with your favorite toppings such as sour cream, shredded cheese, diced onion, avocado, and salsa.

Store any leftovers in an airtight container in your fridge. They will be good for 3 to 4 days after making.

📋 How to freeze leftovers

Place your leftovers in a large plastic storage bag (such as Ziplock). Remove as much excess air as possible and lay flat in your freezer.

Serve with tortillas, on nachos, in taquitos, burritos, or taco salad.

Ingredients
  

  • 3-4 boneless, skinless chicken breast (about 2 pounds) may also substitute chicken thighs, if desired
  • 1 packet taco seasoning I recommend using low sodium
  • 2 cups salsa use your favorite, I used salsa verde but regular red salsa is also great in this recipe
  • 1 large lime or two tablespoons of bottled lime juice
