To make this crockpot spinach queso, you will need:

  • Frozen chopped spinach: You’ll want to defrost your spinach, wring out any extra water, then pat dry with paper towels before adding it in.
  • White American cheese
  • Canned green chiles: Do not drain before adding these in.
  • Cumin and garlic salt: The spices for the dip.
  • Milk: I used 2%.

  • Make it spicy: If you’re a fan of spice and want to add some heat to this queso, add a bit of red hot sauce and a fresh chopped jalapeño.
  • Consistency: If you like a thinner queso, you can add a little more milk.

Begin by defrosting your frozen spinach. Wring out any extra water then pat dry with paper towels. Next, spray your crock-pot with non-stick spray.

Chop your cheese into large blocks so that it melts evenly (step 1). Combine all of your ingredients in your crockpot (image 2). Cook for 3 to 4 hours on low. Stir well and then serve with tortilla chips.

Ingredients
  

  • 1 package frozen spinach about 10 ounces – defrosted
  • 1 pound white American cheese
  • 1 can diced green chiles (about 4.5 ounces) do not drain
  • ½ teaspoon cumin
  • ¼ teaspoon garlic salt
  • ½ cup milk

Instructions

    Hi Lisa, the cream cheese adds a nice flavor that goes with the spinach. If you’re not a cream cheese fan you could try it without, maybe just add a little less milk and salsa so the dip is not runny.
