It’s no secret that I love rice crispy treats. I have made all kinds including: Cookie Butter Rice Crispy Treats, Copycat Chicken Salad Chick Rice Crispy Treats (with chocolate chips and a mix of regular and chocolate rice cereal), Copycat Starbucks Rice Crispy Treats, and even Rice Crispy Treats with Jumbo Marshmallows! I love them all but this brown sugar version is my family’s new favorite.

❤️ Why you’ll love this recipe

  • Taste: These rice crispy treats are sure to be the best rice crispy treats you’ve ever had. They are SO much better than store bought.
  • Texture: They have just the right amount of pull and gooeyness thanks to the extra marshmallows.
  • Easy: These are an easy no bake dessert idea.

🥣 Ingredients needed

The ingredients needed to make brown sugar rice crispy treats.

For this recipe, you will need:

  • Butter: I used unsalted butter but if you only have salted butter, you can use it just be sure to omit the extra salt.
  • Brown sugar: You can use dark or light brown sugar. I used light brown sugar for mine.
  • Mini marshmallows: Be sure to divide them before starting the recipe. You’ll want to set some aside to add directly to the cereal.
  • Rice cereal: Such as Rice Krispies.
  • Salt
  • Vanilla extract

The complete list of ingredients and amounts can be found in the printable recipe card further below in the post.

🔪 Equipment needed

You will need a large pot, a large mixing bowl, and a 9 x 13 inch dish.

⏲️ Recipe instructions (step by step guide)

Steps 1 through 3 showing how to make brown sugar rice crispy treats.

Grease a 9 x 13 inch pan and set aside. Measure out your rice cereal and one cup of marshmallows. Add them to a large bowl and gently mix (image 1).

In a large pot, melt the butter (image 2) then add the remaining mini marshmallows. Stir continuously until everything is well combined. Keep the heat on medium or medium high. Melt everything slowly and stir continuously. Add in the brown sugar, salt, and vanilla extract (image 3).

Steps 4 and 5 showing how to make brown sugar rice crispy treats.

Pour the mixture over the rice cereal and marshmallows and gently stir until everything is combined (image 4).

Add the mixture to your greased pan and gently pat into place (image 5). You can spray your hands with non-stick spray or use a spatula. Do not press too hard or it will cause your treats to be tough/hard. Let them sit for at least one hour before serving.

👩🏻‍🍳 Tips

  • Don’t press on the rice crispy treats too much or they’ll become hard.
  • Use fresh marshmallows and fresh cereal for the best results. Stale ingredients can cause your treats to be tough or hard.
  • You can use light or dark brown sugar.

🥡 How to store leftovers

Store any leftover rice crispy treats in an airtight container at room temperature. They will be good for up to four days after making.

I do not recommend refrigerating or freezing these treats.
